MORINGA SWEET POTATO & KALE BITES

With the beginning of the new year, I told myself that I would be healthier this year! Drink more water, stop drinking pop, eat more whole foods, create self-care habits, and so on! I am sure I am not alone with this goal for 2019. 😉 So, today I want to share one of the new snacks I have started to make: Moringa Sweet Potato & Kale Bites.

This is a perfect healthy snack to make for any get-together! Add it to the list of appetizers, along with a sauce of your choice, and watch them disappear. If you plan to just make them for you or a few people you will want to cut the recipe in half. Otherwise, I hope you enjoy!!

MORINGA SWEET POTATO & KALE BITES

Ingredients:

4 Medium-Sized Sweet Potatoes

2 Tbsp of Non-Dairy Milk

1 Clove of Garlic (minced)

4 Cups of Kale (chopped)

2 Tsp of Moringa Powder

1/4 Of a Yellow Onion (chopped)

1/4 Tsp of Red Pepper Flakes

Olive Oil

1/2 Cup of Chickpeas

Salt & Pepper

Directions:

Peel and slice Sweet Potatoes into medium-sized cubes.

Bring a large pot of water to a boil and add the cubed Sweet Potatoes into the water. Boil for 15 minutes.

While the Sweet Potatoes are boiling, mince the Garlic and slice the Onion.

After the Sweet Potatoes are finished boiling and are tender, drain and add them to a bowl. Add in the Non-Dairy Milk and mash the Sweet Potatoes.

On medium-high heat add oil to a medium-sized skillet. Add Garlic, Onion, and Red Pepper Flakes. Sauté for roughly 1 minute.

Add the Kale and cook until the leaves are wilted. Remove from heat and add sautéed mixture to the Sweet Potatoes.

Add the desired amount of Salt & Pepper. Mix.

Stir in Chickpeas and Moringa Powder until fully mixed.

Grease a baking sheet and roll up mixture into 1.5 inch balls. Preheat the oven to 450 degrees F.

Bake for 15 minutes on top rack. Take the baking sheet out and flip each piece. Put back into the oven on the top rack for 13 more minutes.

Remove from oven and let chill for a few minutes.

Serve with desired sauce.
